High
in the deserts and mountains of northern New Mexico
grow some of the oldest apple orchards in America.
Here, 400 years ago, Spanish
colonial settlers planted
rootstock lovingly carried from Asturias,
the old world kingdom
in northwest Spain
on the
wild green coast of the Bay of Biscay.
The old world apple seedlings thrived in the hot days,
cold nights and mineral rich soils of New Spain, the majestic land that in l912 would
become the State of New Mexico.
The "silver apples of the moon and golden apples of the sun" grew
robust, tart and
tangy.
Today a light, crisp cider of premium quality is pressed from these magical
apples by
The Santa Fe Cider Company and presented in champagne bottles fit to
grace the most elegant tables. Indeed, Santa Fe Cider is
served in many of Santa Fe's renowned restaurants and sold in most of "The City Different's"
natural food markets.
The Santa Fe Cider Company was
founded in 1999 by Cidermasters Paul and
Ruth Laur with the intention of reviving fine traditional ciders, developing
and
supporting New Mexico's organic apple orchards and boosting the region's
green economy.
